Ingredients

  • 1 lb Ground Beef (450g)
  • 1/2 Tbsp (8g) Olive Oil
  • 1 (250g) White Onion, finely diced
  • 5 cloves (25g) Garlic, minced
  • 2 tsp (10 ml) Chili Powder
  • 1 tsp (5 ml) Salt
  • 1 tsp (5 ml) Oregano
  • 1 tsp (5 ml) Cumin
  • 1/2 tsp (3 ml) Black Pepper
  • 1/2 C (120g) Tomato Sauce
  • 4 oz (113 g) Shredded Cheese*
  • 16 Extra Thin Corn Tortillas


Instructions

  1. Set your oven to 400ºF and coat a large baking tray with cooking spray.
  2. Warm the olive oil in a large pan over medium-high heat. Add the onion, moving it to the edges, then place the ground beef in the middle. Cook one side of the beef until it browns, about 4-5 minutes, then turn it over to brown the other side for another 3-4 minutes. Mix the minced garlic with the onions while the beef cooks. Use a spatula to crumble the beef as it finishes cooking.
  3. Incorporate the dry spices and tomato sauce into the mixture, stirring well, before turning off the heat.
  4. Mix in the shredded cheese until it is evenly distributed, then set the mixture aside.
  5. Wrap the tortillas in a paper towel and heat in the microwave for 1 minute. Fill each tortilla with the beef mixture, rolling them tightly and placing them seam side down on the prepared baking sheet.
  6. After all 16 tortillas are rolled and on the baking sheet, spray them with cooking spray and bake for approximately 30 minutes until they are crispy and golden brown.

Notes

  • Try using lean ground beef or turkey to reduce the fat content.
  • Experiment with cheddar, Monterey Jack, or pepper jack cheese for extra flavor.
  • Add diced green chilies or jalapeños for a spicy kick.
