Ingredients
- 454 g ground beef (85/15 or 90/10 fat content) 120 ml cooked meat per quesadilla
- 28 g package taco seasoning or 30 ml homemade taco seasoning
- 80 ml water
- 4 large flour tortillas (15 or 20 cm size)
- 240 ml shredded cheddar cheese 60 ml shredded cheese per quesadilla
- vegetable oil spray or cooking oil spray of choice
- avocado slices
- chopped radishes sprinkled with salt and lime juice
- cilantro-lime slaw
- sour cream
- guacamole
- chopped fresh cilantro
Instructions
- Activate the broiler in your oven to a medium setting, approximately 400°F.
- Lightly coat a large pan with your preferred vegetable oil spray or a small amount of olive oil. Set the stove to medium-high heat.
- Place the ground beef into the preheated pan. Use a wooden spoon to crumble the meat and cook, stirring every couple of minutes, for about 5 minutes.
- Once the meat is mostly cooked with a hint of pink, remove excess grease from the pan.
- Distribute the taco seasoning evenly over the beef, then pour in the water. Mix the seasoning and water thoroughly into the beef. Allow to simmer for 3-4 minutes until the liquid evaporates. Switch off the heat.
- Lay four tortillas on a baking sheet.
- Spread cheese (2 tablespoons) on one half of each tortilla. Layer 1/2 cup of the cooked beef mixture on top of the cheese, then add another 2 tablespoons of cheese over the beef. Fold each tortilla to cover the filling.
- Lightly spray the tops of the quesadillas with oil. Position the quesadillas in the oven beneath the broiler.
- Cook for 3-4 minutes on one side until the tops are golden and crispy. Take them out of the oven and flip with a spatula. There’s no need to add more oil to this side. Return the quesadillas to the broiler and bake for another 3-4 minutes, or until they reach a golden hue and the cheese is thoroughly melted. Keep a watchful eye on them as they cook quickly depending on your oven and broiler.
- Once done, take them out of the oven and serve while warm. You can enjoy them whole or let them cool for a few minutes (around 3-4 minutes), then slice them into 2-4 pieces with a sharp knife.
- Add any toppings you desire before serving.
Notes
- Consider using lean ground turkey or chicken for a healthier twist.
- Experiment with Monterey Jack or pepper jack cheese for a more flavorful outcome.
- Customize your quesadillas with toppings like diced tomatoes, black beans, or jalapeños for added variety.
