Ingredients
- 1 lb (454 g) ground beef
- 1/2 onion diced
- 1 tbsp (15 ml) garlic minced
- 1 1/2 cups (360 g) sharp cheddar shredded
- 1 1/2 cups (360 g) mozzarella shredded
- tortilla chips
- pickled jalapeno for garnish
- cilantro for garnish
- 1 1/2 tbsp (23 ml) cumin
- 1 tbsp (15 ml) oregano
- 1/2 tbsp (8 ml) paprika
- 1/2 tbsp (8 ml) chili powder
- 1 tbsp (15 ml) onion powder
- 1 tbsp (15 ml) garlic powder
- 2 tbsp soy sauce (30 ml) – use a halal-friendly alternative
- 1 tsp (5 ml) sugar
Instructions
- Grate the cheddar and mozzarella and keep them ready for use later.
- In a skillet over medium flame, add some oil and toss in the diced onions. Cook for half a minute, then incorporate the minced garlic, stirring for another minute before introducing the ground beef.
- Crumble the beef as it cooks and, when it’s partially done, mix in all spices except for the soy sauce and sugar. Stir thoroughly to combine. Once the beef is fully browned, add the soy sauce and sugar, mixing well.
- Optional: Remove from heat and shift the beef to one side of the pan. Tilt the pan to let the excess fat pool, then remove it using a glass bowl or absorb with a paper towel. Return the pan to the heat.
- Lower the heat to medium-low and sprinkle the cheese over the beef. Cover with a lid and let the cheese melt completely, then take off the lid and switch off the heat.
- On a serving dish, arrange the tortilla chips. Carefully transfer the cheesy beef mixture from the pan onto the chips. Top with pickled jalapeños and cilantro. Enjoy your meal!
