Ingredients

  • – 1 lb (450g) ground beef, 85% lean
  • – 1.5 tsp (8 ml) Italian seasoning
  • – Salt/Pepper
  • – 3 tbsp (45 ml) vegetable oil, divided
  • – 180g onions, diced
  • – 1 tbsp (15 ml) garlic, minced
  • – 590ml beef broth
  • – 295g uncooked white long grain rice, (not instant rice)
  • – 225g sliced button mushrooms, washed
  • – 295g cream of mushroom soup
  • – 120ml milk, any kind
  • – 120ml sour cream
  • – 450g cheddar cheese, divided


Instructions

  1. Set your oven to 350 degrees to preheat.
  2. Cook the ground beef in a large pot on medium-high heat, adding salt, pepper, and Italian seasoning as it cooks.
  3. Once cooked, pour off the excess fat, place the beef on a plate, and cover it with foil.
  4. In the same pot, heat 2 tablespoons of vegetable oil. Sauté the diced onions for 5 minutes until they’re soft, then add the minced garlic and cook for an additional minute.
  5. Pour in the beef broth along with the remaining vegetable oil and rice. Mix everything together.
  6. Increase the heat to bring the mixture to a boil, then lower to a gentle simmer.
  7. Cover the pot tightly and allow it to cook for 10 minutes.
  8. Include the mushrooms, cover again, and continue to cook for another 5-10 minutes, checking the rice package for precise cooking time. Avoid stirring the rice.
  9. Turn off the heat, keeping the lid on, and let it sit for 10 minutes without mixing to allow the rice at the bottom to loosen.
  10. Return the cooked beef to the pot and add the cream of mushroom soup, milk, sour cream, and half of the cheddar cheese. Stir everything together thoroughly.
  11. Move the mixture to a greased 9 x 13 casserole dish and sprinkle the remaining cheese on top.
  12. Cover the dish and bake it for 20 minutes. Enjoy your meal!
