Ingredients
- – 1 lb (450g) ground beef, 85% lean
- – 1.5 tsp (8 ml) Italian seasoning
- – Salt/Pepper
- – 3 tbsp (45 ml) vegetable oil, divided
- – 180g onions, diced
- – 1 tbsp (15 ml) garlic, minced
- – 590ml beef broth
- – 295g uncooked white long grain rice, (not instant rice)
- – 225g sliced button mushrooms, washed
- – 295g cream of mushroom soup
- – 120ml milk, any kind
- – 120ml sour cream
- – 450g cheddar cheese, divided
Instructions
- Set your oven to 350 degrees to preheat.
- Cook the ground beef in a large pot on medium-high heat, adding salt, pepper, and Italian seasoning as it cooks.
- Once cooked, pour off the excess fat, place the beef on a plate, and cover it with foil.
- In the same pot, heat 2 tablespoons of vegetable oil. Sauté the diced onions for 5 minutes until they’re soft, then add the minced garlic and cook for an additional minute.
- Pour in the beef broth along with the remaining vegetable oil and rice. Mix everything together.
- Increase the heat to bring the mixture to a boil, then lower to a gentle simmer.
- Cover the pot tightly and allow it to cook for 10 minutes.
- Include the mushrooms, cover again, and continue to cook for another 5-10 minutes, checking the rice package for precise cooking time. Avoid stirring the rice.
- Turn off the heat, keeping the lid on, and let it sit for 10 minutes without mixing to allow the rice at the bottom to loosen.
- Return the cooked beef to the pot and add the cream of mushroom soup, milk, sour cream, and half of the cheddar cheese. Stir everything together thoroughly.
- Move the mixture to a greased 9 x 13 casserole dish and sprinkle the remaining cheese on top.
- Cover the dish and bake it for 20 minutes. Enjoy your meal!
