Ingredients

  • – 2 large tortillas (regular or low-carb/high-protein)
  • – 7 oz (200 g) cooked beef, chopped (rotisserie is great)
  • – 2 garlic cloves, minced or grated (adjust to taste)
  • – 2 tablespoons (30 ml) light mayonnaise
  • – 1 tablespoon (15 ml) light Greek yogurt or plain yogurt
  • – 2 teaspoons (10 ml) hot sauce like Frank’s
  • – 1/4 teaspoon (1 ml) salt
  • – 3 oz (90 g) grated cheese (I used a cheddar blend)
  • – 1 green onion, chopped
  • – Vegetable oil spray


Instructions

  1. Combine the chopped beef, garlic, mayonnaise, yogurt, hot sauce, and salt in a mixing bowl.
  2. Spread out your tortilla. Scatter approximately 2 tablespoons of cheese on the lower third, then add about ⅔ cup of the beef mixture on top. Sprinkle with an additional tablespoon of cheese and some chopped green onion.
  3. Fold the sides of the tortilla inward, then roll it up snugly starting from the bottom.
  4. Warm a non-stick skillet over medium-high heat and coat it lightly with vegetable oil spray.
  5. Position the wraps with the seam side facing down. Cook each side for 3–4 minutes until they are crispy and golden brown. Use a lid to retain heat and warm the interior.
  6. Cut the wraps in half and enjoy!
