Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 1 pound boneless, skinless chicken breasts, cut into small pieces (450 g)
  • Salt, to taste
  • Black pepper, to taste
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning (5 g)
  • 9 lasagna noodles
  • 2 cups ricotta cheese (475 g)
  • 1 egg
  • 1 cup grated alternative cheese (100 g)
  • 2 cups shredded alternative cheese (200 g)
  • 4 cups fresh spinach, chopped (about 120 g)
  • 3 cups marinara sauce (720 ml)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chicken pieces to the skillet.
  4. Season the chicken with salt and black pepper.
  5. Cook the chicken until browned and cooked through, about 5-7 minutes.
  6. Add the minced garlic and dried Italian seasoning to the chicken.
  7. Stir and cook for an additional 1-2 minutes.
  8. Remove the skillet from heat and set aside.
  9. Cook the lasagna noodles according to package instructions.
  10. Drain the noodles and set aside.
  11. In a bowl, combine the ricotta cheese, egg, and half of the Parmesan cheese.
  12. Season the ricotta mixture with a pinch of salt and pepper.
  13. Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
  14. Place 3 cooked lasagna noodles over the marinara sauce.
  15. Spread half of the ricotta mixture over the noodles.
  16. Layer half of the chicken mixture over the ricotta.
  17. Sprinkle half of the chopped spinach over the chicken.
  18. Sprinkle 1 cup of mozzarella cheese over the spinach.
  19. Pour 1 cup of marinara sauce over the mozzarella.
  20. Repeat the layers with the remaining noodles, ricotta, chicken, spinach, and marinara sauce.
  21. Top the final layer with the remaining mozzarella and Parmesan cheese.
  22. Cover the dish with aluminum foil.
  23. Bake the lasagna in the preheated oven for 25 minutes.
  24. Remove the foil and bake for an additional 15 minutes, until cheese is melted and bubbly.
  25. Let the lasagna cool for 10 minutes before serving.
