Ingredients
- 2 tablespoons olive oil (30 ml)
- 1 pound boneless, skinless chicken breasts, cut into small pieces (450 g)
- Salt, to taste
- Black pepper, to taste
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning (5 g)
- 9 lasagna noodles
- 2 cups ricotta cheese (475 g)
- 1 egg
- 1 cup grated alternative cheese (100 g)
- 2 cups shredded alternative cheese (200 g)
- 4 cups fresh spinach, chopped (about 120 g)
- 3 cups marinara sauce (720 ml)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken pieces to the skillet.
- Season the chicken with salt and black pepper.
- Cook the chicken until browned and cooked through, about 5-7 minutes.
- Add the minced garlic and dried Italian seasoning to the chicken.
- Stir and cook for an additional 1-2 minutes.
- Remove the skillet from heat and set aside.
- Cook the lasagna noodles according to package instructions.
- Drain the noodles and set aside.
- In a bowl, combine the ricotta cheese, egg, and half of the Parmesan cheese.
- Season the ricotta mixture with a pinch of salt and pepper.
- Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
- Place 3 cooked lasagna noodles over the marinara sauce.
- Spread half of the ricotta mixture over the noodles.
- Layer half of the chicken mixture over the ricotta.
- Sprinkle half of the chopped spinach over the chicken.
- Sprinkle 1 cup of mozzarella cheese over the spinach.
- Pour 1 cup of marinara sauce over the mozzarella.
- Repeat the layers with the remaining noodles, ricotta, chicken, spinach, and marinara sauce.
- Top the final layer with the remaining mozzarella and Parmesan cheese.
- Cover the dish with aluminum foil.
- Bake the lasagna in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, until cheese is melted and bubbly.
- Let the lasagna cool for 10 minutes before serving.
