  • 2 cups (475 ml) homemade enchilada sauce, divided or store bought
  • 2-1/2 cups (300 g) shredded cheddar or Monterey Jack cheese, divided
  • 1/2 tsp (2.5 ml) table salt
  • 1/4 tsp (1.25 ml) ground black pepper
  • 8 homemade corn tortillas or store bought


Instructions

  1. Set your oven to 350 degrees F to warm it up.
  2. In a medium-sized bowl, blend the beef, 1/4 cup of enchilada sauce, 1 cup of cheese, salt, and pepper until well mixed.
