Ingredients
- 1-1/2 cups (355 ml) cooked and shredded beef
- 2 cups (475 ml) homemade enchilada sauce, divided or store bought
- 2-1/2 cups (300 g) shredded cheddar or Monterey Jack cheese, divided
- 1/2 tsp (2.5 ml) table salt
- 1/4 tsp (1.25 ml) ground black pepper
- 8 homemade corn tortillas or store bought
Instructions
- Set your oven to 350 degrees F to warm it up.
- In a medium-sized bowl, blend the beef, 1/4 cup of enchilada sauce, 1 cup of cheese, salt, and pepper until well mixed.
- Spoon the beef mixture into each tortilla. If the tortillas are store-bought, wrap them in a moist paper towel and microwave for 30 seconds on each side to soften.
- Roll each tortilla securely and position them seam-side down in a 9 x 13 baking dish, ensuring they stay closed.
- Drizzle the rest of the enchilada sauce over the tortillas and sprinkle the remaining cheese on top.
- Place the dish in the oven and cook for 20-25 minutes, or until the cheese is fully melted and bubbly.
- Serve promptly with your choice of toppings.
