Ingredients

  • 454 g cooked boneless, skinless chicken breast, diced (1 lb)
  • 1 can (298 g) low-sodium cream of chicken soup
  • 720 ml cooked long grain white rice (3 cups)
  • 357 g frozen baby broccoli florets (1 bag)
  • 300 ml light sour cream (1 1/4 cups)
  • 113 g shredded cheddar cheese (Colby jack)
  • 5 ml garlic powder (1 1/2 tbsp)
  • 5 ml paprika (1 tsp)
  • Salt & pepper to taste


Instructions

  1. Set your oven to 375°F (190°C) and lightly coat a 9 x 13-inch baking dish with cooking spray, then place it aside.
  2. In a large mixing bowl, combine the diced chicken, low-sodium cream of chicken soup, cooked white rice, frozen baby broccoli florets, light sour cream, half of the shredded cheddar cheese, garlic powder, paprika, plus salt and pepper to your preference. Stir until everything is well mixed.
  3. Transfer the mixture into the baking dish you prepared earlier and sprinkle the remaining shredded cheese over the top.
  4. Place in the oven and bake for approximately 20-30 minutes, or until the cheese is bubbly and golden, and the broccoli is soft.
  5. Serve while hot and savor the flavors!
