Ingredients
- 2 cups (380g) uncooked long grain white rice
- 2 cups (226g) shredded cheddar cheese
- 3 boneless chicken breasts, cut in half lengthwise
- 2 cans (10.5 oz / 298g each) condensed cream of chicken soup (OR homemade cream of chicken soup)
- 2 cups (480ml) beef broth
- 1 cup (240ml) milk
- 3 tablespoons (45 ml) vegetable oil
- 1 tablespoon (15 ml) fresh minced parsley
Instructions
- Set your oven to 350°F to preheat.
- Lightly coat a 9×13 inch baking dish with cooking spray. Evenly distribute the uncooked rice across the bottom of the dish and sprinkle with half of the shredded cheddar.
- Place the chicken breast halves on top and evenly spread the condensed cream of chicken soup over them.
- Pour in the beef broth and milk, then bake, covered, at 350°F for 1 hour and 30 minutes or until the rice is fully cooked.
- Take the dish out of the oven, gently mix the rice with the sauce, and sprinkle the rest of the cheddar cheese on top. Put the dish back in the oven for 5 minutes or until the cheese is melted.
- Allow it to rest for 10 minutes before serving, and finish by garnishing with fresh parsley. Add salt and pepper as desired.

- Consider using homemade cream of chicken soup for a richer flavor.
- Enhance the dish by adding diced vegetables like bell peppers or peas before baking.
- To keep the rice moist, tightly cover the baking dish with foil while baking.
