Ingredients
- 1 lb ground beef (450 g)
- 1 medium onion, diced
- 8 oz (227 g) fresh button mushrooms, chopped
- 2 cloves garlic, minced or fine grated
- 1 tsp (5 ml) dried oregano or Italian seasoning
- 2 tsp (10 ml) salt
- 2 – 340 g packages of frozen spinach
- 120 g long grain white rice (or rice of your choice) prepared according to package directions (measurement based on dry uncooked rice)
- 1 Tbs vegetable oil
- 1 cup (240 ml) sour cream
- 180 ml milk or cream
- 1 cup (60 g) shredded or grated vegetarian-friendly cheese
- 2 cups (225 g) shredded cheese (e.g., cheddar or mozzarella)
Instructions
- Set your oven to a temperature of 350°F.
- In a large pan or Dutch oven, cook the ground beef with the diced onion, chopped mushrooms, minced garlic, oregano, and salt on medium heat until the meat is browned and the vegetables are tender and aromatic.
- While the meat mixture is cooking, defrost the frozen spinach by microwaving it for about 4 minutes in a microwave-safe container. Afterward, drain the spinach by pressing it against the sides of the container over a sink to remove extra water, or use a cheesecloth or sieve if you prefer.
- Once the spinach is thoroughly drained, incorporate it into the browned meat mixture and stir to combine.
- In a separate bowl, mix the cooked rice with the vegetable oil until combined. Then, add the sour cream, milk, and vegetarian-friendly cheese, stirring until the mixture is smooth and creamy.
- Combine the creamy rice mixture with the beef and spinach in the pan, mixing well. Transfer this combined mixture into a 9 x 13 inch casserole dish, spreading it evenly across the dish.
- Evenly distribute the shredded cheese, such as cheddar or mozzarella, over the top of the casserole.
- Place in the oven and bake for 35 to 40 minutes, or until the casserole is bubbling and the cheese has melted and is lightly golden on top.
- After taking it out of the oven, let it sit for about 5 minutes before cutting and serving.
