Description

A warm, comforting soup made with ground beef, tender potatoes, and creamy cheddar cheese. Perfect for chilly evenings.

Ingredients

  • 1 pound ground beef
  • 4 cups diced potatoes
  • 1 onion, chopped
  • 4 cups beef broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat from the meat.
  2. Add the chopped onion and diced potatoes to the pot. Cook until the onion becomes translucent.
  3. Pour in 4 cups of beef broth and bring the mixture to a boil.
  4. Reduce the heat and simmer the soup until the potatoes are tender, typically about 15-20 minutes.
  5. Stir in 1 cup of milk and 2 cups of shredded cheddar cheese. Continue stirring until the cheese melts and the soup achieves a creamy consistency.
  6. Season with salt and pepper to taste.
  7. Serve the soup hot, topped with fresh parsley and additional cheese if desired.

Notes

For added flavor, sauté a clove of minced garlic with the beef. You can add different vegetables like carrots or celery for extra nutrition.
