Ingredients
- 1 pound ground beef
- 4 cups diced potatoes
- 1 onion, chopped
- 4 cups beef broth
- 1 cup milk
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat from the meat.
- Add the chopped onion and diced potatoes to the pot. Cook until the onion becomes translucent.
- Pour in 4 cups of beef broth and bring the mixture to a boil.
- Reduce the heat and simmer the soup until the potatoes are tender, typically about 15-20 minutes.
- Stir in 1 cup of milk and 2 cups of shredded cheddar cheese. Continue stirring until the cheese melts and the soup achieves a creamy consistency.
- Season with salt and pepper to taste.
- Serve the soup hot, topped with fresh parsley and additional cheese if desired.
