Discover how to make a delicious Cheesy Beef & Potato Casserole that’s perfect for family dinners. This easy recipe will become a go-to favorite!
Ingredients
- nonstick cooking spray
- 3 cups (720 ml) thinly sliced, peeled potatoes
- 2 tablespoons (30 ml) vegetable oil, melted
- 5 teaspoon (3 ml) salt
- 1 pound (450 g) ground beef
- 1 (10.5 ounce (298 g)) can mushroom soup
- 5 cups (150 g) shredded sharp Cheddar cheese, divided
- 5 cup (120 ml) milk
- salt and ground black pepper to taste
Instructions
- Set your oven to 400 degrees F (200 degrees C) to preheat. Coat a 9×13-inch baking dish with a layer of nonstick cooking spray.
- In a sizable bowl, place the thinly sliced potatoes. Drizzle them with melted vegetable oil and sprinkle with 0.5 teaspoon of salt; toss until the potatoes are evenly coated. Layer the potato slices in overlapping fashion to cover the bottom and sides of the prepared dish.
- Put the dish in the preheated oven and bake until the potatoes are easily pierced with a fork, approximately 20 to 30 minutes.
- Meanwhile, place a large skillet on medium-high heat. Cook the ground beef in the heated skillet, stirring, until it is browned and crumbly, about 5 to 7 minutes. Drain and dispose of any excess grease.
- Move the cooked beef to a large bowl and combine it with the mushroom soup, 3/4 cup of Cheddar cheese, and milk. Season with salt and pepper, then mix until everything is thoroughly blended.
- Take the baked potatoes out of the oven. Spread the beef mixture evenly over the potatoes, then return the dish to the oven. Bake until the mixture is heated through, roughly 15 minutes. Scatter the remaining Cheddar on top and continue baking until the cheese is melted, about 4 to 5 additional minutes.
Notes
- For a healthier twist, opt for lean ground beef or ground turkey instead of regular beef.
- Try different cheeses like mozzarella or pepper jack for a unique flavor.
- Add diced bell peppers or onions to the beef mixture for added color and nutrition.
