Ingredients
- 4 large flour tortillas (360 g)
- 1 1/2 cups (360 ml) shredded cheddar
- 1 cup (240 ml) chopped cooked beef or any precooked boneless chicken
- 6 slices of turkey bacon cooked
- 2 scallions finely diced
- 4 tablespoon (60 ml) ranch dressing plus more for serving
- 2 tablespoon (30 ml) vegetable oil
Instructions
- Position a tortilla on your work surface and layer with one-half cup of cheddar cheese. Scatter half of the chicken, half of the turkey bacon, and half of the scallions over it, followed by a drizzle of ranch dressing (approximately 2 tablespoons). Cover with another half cup of cheese and place a second tortilla on top.
- In a large skillet, heat some oil over medium heat. Spread the oil evenly around the pan and place the quesadilla inside.
- Cook for 2-5 minutes on one side until it turns crispy and golden, and the cheese begins to melt. Gently turn the quesadilla over and cook for an additional 2-3 minutes until all the cheese is melted and the tortilla is golden and crispy.
- Take off the heat and sprinkle a small amount of salt while it’s hot.
- Repeat the above steps with the remaining ingredients.
- Serve with extra ranch dressing, and optionally, with salsa and pickled jalapeños.
