Ingredients
- 500 g / 1 lb beef mince(ground beef)
- 1 tsp (5 ml) onion powder
- 1/2 tsp (3 ml) garlic powder
- 1/2 tsp (3 ml) salt
- 1/2 tsp (3 ml) black pepper
- 1 1/2 tsp (8 ml) soy sauce
- 1 cup (240 ml) panko breadcrumbs(or 3/4 cup (180 ml) normal breadcrumbs)
- 1 egg
- 1 tbsp (15 ml) oil
- 6 – 8 processed cheese slices
- Baby gherkins
- Ketchup, to serve
Instructions
- Mix the ground beef, onion powder, garlic powder, salt, black pepper, soy sauce, breadcrumbs, and egg in a bowl using your hands until well combined.
- Chill the mixture in the fridge for half an hour to make it easier to shape. If you’re short on time, incorporate more breadcrumbs to make the mixture manageable.
- Take generous spoonfuls of the mixture and place them on your work surface with a quick motion. Continue with the rest of the mixture, then shape each portion into a ball.
- Slice the cheese into small squares to place on each meatball.
- If the gherkins are large, slice them in half lengthwise.
- Warm the oil in a frying pan over medium-high heat. Cook the meatballs in batches, shaking the pan to ensure they brown evenly on all sides and are cooked through, about 5 minutes. Between batches, remove excess oil but retain some for the next round.
- Arrange the cooked meatballs on a large microwave-safe plate. Place a piece of cheese and a gherkin on top of each meatball, securing with a toothpick.
- Microwave the plate for 60 to 90 seconds, or until the cheese has melted. Serve the meatballs hot, accompanied by ketchup!
