Ingredients

  • 500 g / 1 lb beef mince(ground beef)
  • 1 tsp (5 ml) onion powder
  • 1/2 tsp (3 ml) garlic powder
  • 1/2 tsp (3 ml) salt
  • 1/2 tsp (3 ml) black pepper
  • 1 1/2 tsp (8 ml) soy sauce
  • 1 cup (240 ml) panko breadcrumbs(or 3/4 cup (180 ml) normal breadcrumbs)
  • 1 egg
  • 1 tbsp (15 ml) oil
  • 6 – 8 processed cheese slices
  • Baby gherkins
  • Ketchup, to serve


Instructions

  1. Mix the ground beef, onion powder, garlic powder, salt, black pepper, soy sauce, breadcrumbs, and egg in a bowl using your hands until well combined.
  2. Chill the mixture in the fridge for half an hour to make it easier to shape. If you’re short on time, incorporate more breadcrumbs to make the mixture manageable.
  3. Take generous spoonfuls of the mixture and place them on your work surface with a quick motion. Continue with the rest of the mixture, then shape each portion into a ball.
  4. Slice the cheese into small squares to place on each meatball.
  5. If the gherkins are large, slice them in half lengthwise.
  6. Warm the oil in a frying pan over medium-high heat. Cook the meatballs in batches, shaking the pan to ensure they brown evenly on all sides and are cooked through, about 5 minutes. Between batches, remove excess oil but retain some for the next round.
  7. Arrange the cooked meatballs on a large microwave-safe plate. Place a piece of cheese and a gherkin on top of each meatball, securing with a toothpick.
  8. Microwave the plate for 60 to 90 seconds, or until the cheese has melted. Serve the meatballs hot, accompanied by ketchup!
