Ingredients
- – 2 cups (480 ml) brown rice rotini pasta
- – 2 tsp (10 ml) olive oil
- – 1 1/2 cups (360 ml) onions, finely chopped
- – 1 garlic clove, finely chopped
- – 1 lb (450 g) lean ground beef
- – 3/4 tsp (4 ml) salt
- – 1/2 tsp (3 ml) black pepper
- – 2 tbsp (30 ml) tomato paste
- – 28 oz (800 g) diced tomatoes
- – 2 tbsp (30 ml) mustard
- – 2 cups (200 g) reduced-fat grated cheddar cheese
- – 1/4 cup (60 ml) chopped dill pickles
Instructions
- Set your oven to 350°F (175°C) and lightly coat a 9 x 13 inch baking pan with non-stick spray.
- Cook the pasta in a large pot of salted boiling water until it reaches a firm, yet tender texture, then drain thoroughly.
- While the pasta cooks, warm the oil in a large pan over medium-low heat. Cook the onions until they are tender, around 5 minutes. Add the garlic and sauté for 30 seconds.
- Incorporate the beef into the pan and cook until it turns brown; add salt and pepper to taste.
- Mix in the tomato paste, followed by the tomatoes and mustard. Allow the mixture to simmer until it thickens slightly, approximately 2 minutes.
- Combine the meat mixture with the pasta and evenly spread it in the greased baking pan.
- Sprinkle the top with cheddar and bake until the cheese is fully melted, roughly 15 minutes. Scatter the chopped pickles on top before serving.
