Ingredients

  • – 2 cups (480 ml) brown rice rotini pasta
  • – 2 tsp (10 ml) olive oil
  • – 1 1/2 cups (360 ml) onions, finely chopped
  • – 1 garlic clove, finely chopped
  • – 1 lb (450 g) lean ground beef
  • – 3/4 tsp (4 ml) salt
  • – 1/2 tsp (3 ml) black pepper
  • – 2 tbsp (30 ml) tomato paste
  • – 28 oz (800 g) diced tomatoes
  • – 2 tbsp (30 ml) mustard
  • – 2 cups (200 g) reduced-fat grated cheddar cheese
  • – 1/4 cup (60 ml) chopped dill pickles


Instructions

  1. Set your oven to 350°F (175°C) and lightly coat a 9 x 13 inch baking pan with non-stick spray.
  2. Cook the pasta in a large pot of salted boiling water until it reaches a firm, yet tender texture, then drain thoroughly.
  3. While the pasta cooks, warm the oil in a large pan over medium-low heat. Cook the onions until they are tender, around 5 minutes. Add the garlic and sauté for 30 seconds.
  4. Incorporate the beef into the pan and cook until it turns brown; add salt and pepper to taste.
  5. Mix in the tomato paste, followed by the tomatoes and mustard. Allow the mixture to simmer until it thickens slightly, approximately 2 minutes.
  6. Combine the meat mixture with the pasta and evenly spread it in the greased baking pan.
  7. Sprinkle the top with cheddar and bake until the cheese is fully melted, roughly 15 minutes. Scatter the chopped pickles on top before serving.
