Ingredients

  • 1/2 Tablespoon (7 ml) olive oil
  • 1 lb. (454 g) ground beef
  • 1 small yellow onion (diced)
  • 1/2 cup (120 ml) diced bell pepper (about 1/2 large bell pepper)
  • 2 Tablespoons (30 ml) taco seasoning (storebought or homemade)
  • 2 Tablespoons (30 ml) water
  • 1/2 cup (120 ml) tomato sauce
  • 2 tablespoons (30 ml) vegetable oil
  • 4 large flour tortillas
  • 4 cups (400 g) shredded cheese


Instructions

  1. Set your oven to 200 degrees to preheat.
  2. Warm the olive oil in a large frying pan over medium-high heat. Add the ground beef, breaking it into small pieces across the pan. Cook for 2-3 minutes until the bottom is browned. Turn over, crumble further, then incorporate the diced onions and bell peppers, cooking for another 3-4 minutes until the beef is fully cooked and the vegetables are tender. Remove any extra grease from the pan.
  3. Evenly distribute the taco seasoning over the mixture, then pour in the water and tomato sauce. Mix thoroughly until the mixture is slightly thick. Transfer the beef mixture to a plate.
  4. Clean the skillet and return it to medium heat. Add a small amount of vegetable oil to coat the pan. Lay a tortilla in the skillet, then scatter about 1 cup of cheese evenly over it. Cook until the cheese begins to melt, approximately 2 minutes.
  5. Place a quarter of the prepared filling on one half of the tortilla, then fold the cheesy side over the beef side using a spatula. Press down with the spatula so the cheese melts into the beef on both sides. Cook for an additional 1-2 minutes until the bottom is golden brown, flip, and cook the other side for another 1-2 minutes if necessary.
  6. Take it out of the skillet and place it on a cooling rack in the 200 degree oven to maintain warmth. Repeat the process with the remaining quesadillas.
