Ingredients

  • 1/2 Tablespoon (7 ml) vegetable oil
  • 1 lb. (454 g) ground beef
  • 1 small yellow onion (diced)
  • 1/2 cup (120 ml) diced bell pepper (about 1/2 large bell pepper)
  • 2 Tablespoons (30 ml) taco seasoning (storebought or homemade)
  • 2 Tablespoons (30 ml) water
  • 1/2 cup (120 ml) tomato sauce
  • 2 Tablespoons (28 g) butter
  • 4 large flour tortillas
  • 4 cups (400 g) shredded cheese


Instructions

  1. Set the oven temperature to 200 degrees.
  2. Warm the vegetable oil in a large frying pan over medium-high heat. Add the ground beef, breaking it into smaller pieces in the pan. Let it cook for 2-3 minutes until the bottom is browned. Turn over and further break it into smaller bits, then introduce the diced onions and bell peppers, cooking for another 3-4 minutes until the beef is fully cooked and the vegetables have softened. Remove any extra grease from the pan.
  3. Evenly distribute the taco seasoning over the mixture, then pour in the water and tomato sauce. Mix thoroughly until the blend thickens slightly. Transfer the beef mixture to a plate.
  4. Clean the skillet and set it back over medium heat. Melt some butter in the pan, ensuring it coats the entire surface. Lay a tortilla flat in the pan, then evenly spread approximately 1 cup of shredded cheese on it. Let it heat for about 2 minutes until the cheese starts to melt.
  5. Spoon a quarter of the beef mixture onto one half of the tortilla, then fold the cheesy side over the beef using a spatula. Press down with the spatula so the cheese melds with the beef on both sides. Continue cooking for another minute or two until the bottom is golden brown, then flip to the other side and cook for an additional 1-2 minutes if necessary.
  6. Take it out of the pan and place it on a wire rack in the preheated oven to keep warm. Repeat the process for the remaining quesadillas.
