Description

A comforting and nostalgic casserole featuring flaky Cheddar Bay biscuits and a cheesy egg filling, perfect for weekend breakfasts.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/2 cup cold butter, cubed
  • 1 cup shredded cheddar cheese
  • 3/4 cup buttermilk
  • 6 large eggs
  • 1/2 cup milk (whole or 2%)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 4 strips turkey bacon, cooked and crumbled
  • 1/4 cup chopped green onions (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together flour, baking powder, salt, and garlic powder.
  3. Add cubed cold butter and blend using a pastry cutter or forks until the mixture resembles coarse crumbs.
  4. Fold in 1 cup of shredded cheddar cheese and gradually add buttermilk until just combined; do not overmix.
  5. In a separate bowl, whisk together eggs, milk, salt, black pepper, and onion powder. Stir in the crumbled turkey bacon.
  6. Spoon dollops of biscuit dough into a greased 9×13 inch baking dish and pour the egg mixture over it.
  7. Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
  8. Bake for 25-30 minutes or until golden brown and puffed. Let cool for a few minutes before serving. Garnish with green onions if desired.

Notes

For extra flavor, use freshly shredded cheddar cheese and feel free to add more vegetables like bell peppers or spinach to the egg mixture.
