Description

A delightful cheddar and herb soda bread that combines the richness of cheddar cheese with fresh herbs for a comforting and versatile loaf.


Ingredients

  • 4 cups all-purpose flour (plus extra as needed)
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk


Instructions

  1. In a mixing bowl, combine the flour, baking soda, and salt. Stir until fully incorporated.
  2. Add the chopped fresh herbs and the shredded cheddar cheese to the dry mixture. Fold them in gently to distribute evenly.
  3. Pour in the buttermilk, stirring until the dough comes together.
  4. Turn the dough out onto a lightly floured counter and bring it into a ball. Knead it lightly just a couple of times until smooth. Avoid over-kneading to ensure the bread rises properly.
  5. Shape the dough into a ball and pat it into a 7-inch circle.
  6. Transfer the dough onto the floured baking sheet and dust the top with more flour.
  7. Use a sharp knife to score a cross into the top of the dough, cutting about ½ inch deep.
  8. Bake the bread for 15 minutes at 425°F. Then, reduce the oven temperature to 375°F and continue baking for an additional 30 to 35 minutes until fully cooked. The loaf should sound hollow when tapped on the bottom.
  9. After baking, wrap the soda bread in a tea towel to cool.

Notes

Experiment with different herbs for a unique flavor. Be careful not to over-knead the dough to maintain its light texture.
