A creamy and comforting cauliflower soup perfect for cozy evenings.
Ingredients
- 1 head of cauliflower, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of heavy cream or coconut milk
- 1 cup of shredded cheese (e.g., cheddar)
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat a generous splash of olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until they release their fragrant aroma.
- Stir in the chopped cauliflower and pour in the vegetable broth. Bring to a boil, then reduce heat and let it simmer for 20 minutes, or until the cauliflower is tender.
- Use an immersion blender to purée the soup until smooth. If using a regular blender, allow soup to cool slightly before blending in batches.
- Once blended, stir in the heavy cream and shredded cheese. Season with salt and pepper to taste and heat through until warm.
Notes
Adjust seasoning to taste. For a dip-like consistency, reduce the amount of broth. Add fresh herbs for garnish.
