Description

A creamy and comforting cauliflower soup perfect for cozy evenings.


Ingredients

  • 1 head of cauliflower, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of heavy cream or coconut milk
  • 1 cup of shredded cheese (e.g., cheddar)
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Heat a generous splash of olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until they release their fragrant aroma.
  3. Stir in the chopped cauliflower and pour in the vegetable broth. Bring to a boil, then reduce heat and let it simmer for 20 minutes, or until the cauliflower is tender.
  4. Use an immersion blender to purée the soup until smooth. If using a regular blender, allow soup to cool slightly before blending in batches.
  5. Once blended, stir in the heavy cream and shredded cheese. Season with salt and pepper to taste and heat through until warm.

Notes

Adjust seasoning to taste. For a dip-like consistency, reduce the amount of broth. Add fresh herbs for garnish.
