Ingredients
- 1 small head of cauliflower, cut into florets
- 1 cup cheddar cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1/4 cup green onions, finely chopped
- 1/4 cup parsley, chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 eggs
Instructions
- Boil the cauliflower florets in salted water until tender, about 10 minutes. Drain well and let it cool slightly.
- Mash the cauliflower until smooth, ensuring there are no lumps.
- In a large mixing bowl, combine the mashed cauliflower, cheddar cheese, and parmesan cheese. Mix well.
- Add the minced garlic, chopped green onions, and parsley to the bowl. Stir to combine.
- Beat the eggs in a separate bowl and pour into the cauliflower mixture. Mix to bind the ingredients.
- Gradually add breadcrumbs until the mixture holds together but is not overly dry.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Scoop out portions of the mixture and form into balls, placing them on the prepared baking sheet.
- Bake for 20-25 minutes until golden brown and crispy on the outside.
Notes
Ensure cauliflower is well-drained after boiling to avoid sogginess. You can experiment with different herbs for added flavor.
