Description

Delicious and crispy cauliflower cheese balls, perfect for appetizers or snacks, combining cheddar, parmesan, and fresh herbs.


Ingredients

  • 1 small head of cauliflower, cut into florets
  • 1 cup cheddar cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup green onions, finely chopped
  • 1/4 cup parsley, chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 eggs


Instructions

  1. Boil the cauliflower florets in salted water until tender, about 10 minutes. Drain well and let it cool slightly.
  2. Mash the cauliflower until smooth, ensuring there are no lumps.
  3. In a large mixing bowl, combine the mashed cauliflower, cheddar cheese, and parmesan cheese. Mix well.
  4. Add the minced garlic, chopped green onions, and parsley to the bowl. Stir to combine.
  5. Beat the eggs in a separate bowl and pour into the cauliflower mixture. Mix to bind the ingredients.
  6. Gradually add breadcrumbs until the mixture holds together but is not overly dry.
  7. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  8. Scoop out portions of the mixture and form into balls, placing them on the prepared baking sheet.
  9. Bake for 20-25 minutes until golden brown and crispy on the outside.

Ensure cauliflower is well-drained after boiling to avoid sogginess. You can experiment with different herbs for added flavor.
