Description
A comforting and invigorating dish made with yuca and a zesty garlic and citrus mojo sauce.
Ingredients
- 1-2 pounds Yuca (cassava), peeled and cut into chunks
- 3-4 garlic cloves, minced
- ¼ cup olive oil or vegetable oil
- 2-3 tablespoons lemon or lime juice
- Salt, to taste
- Cilantro (optional), chopped, for garnish
Instructions
- Peel the yuca and cut it into chunks.
- Boil the yuca in salted water until tender, about 20-30 minutes. Drain and set aside.
- In a small saucepan, heat olive oil over medium heat.
- Add minced garlic and sauté until golden.
- Remove from heat and stir in lemon or lime juice.
- Pour the garlic oil over the boiled yuca and sprinkle with salt and chopped cilantro if desired.
- Serve warm.
Notes
For a twist, consider adding red pepper flakes for heat or cumin for an earthy profile.
