Description

A delightful dish featuring tender yuca paired with a vibrant, zesty mojo sauce made from garlic, olive oil, and sour orange juice.


Ingredients

  • 2 pounds yuca (cassava)
  • 4 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup sour orange juice (or a mix of orange and lime juice)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro (optional)


Instructions

  1. Peel the yuca and cut into large chunks.
  2. Boil the yuca in salted water for about 20-30 minutes, or until tender.
  3. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  4. Add the sour orange juice, salt, and black pepper to the skillet, mixing well and cooking for an additional minute.
  5. Drain the yuca and serve with the mojo sauce drizzled over the top. Garnish with cilantro if desired.

Notes

Make sure to not overcook the yuca to maintain a pleasing texture. Fresh cilantro enhances flavor.
