Description
Hearty, protein-packed pancakes made with cottage cheese and protein powder for a fluffy breakfast treat.
Ingredients
- 100g cottage cheese (about ½ cup)
- 2 large scoops protein powder
- 3 large eggs
- 1 teaspoon baking powder
- 1 tablespoon grass-fed butter for cooking
Instructions
- Blend ingredients: Combine cottage cheese, eggs, protein powder, and baking powder in an electric blender. Blend until smooth, or hand mix in a bowl until well incorporated.
- Heat pan: Heat a small frying pan over medium-high heat and melt butter.
- Cook pancakes: Pour a spoonful of batter into the pan, using the back of the spoon to spread it slightly. Cook for about 1 minute until the bottom has firmed and edges set.
- Flip: Carefully flip the pancake and cook for another 30-45 seconds until golden brown.
- Repeat: Continue with remaining batter, adding more butter to the pan as needed between batches.
Notes
Experiment with different flavors of protein powder or add high-protein ingredients like flaxseed for extra nutrition.
