Description

A hearty and robust chili recipe featuring layers of flavor from bacon, sirloin, and ground beef, perfect for gatherings or cozy nights in.


Ingredients

  • 1 pound bacon
  • 1 tablespoon tallow or bacon grease
  • 1 pound boneless sirloin, cut into bite-sized chunks
  • 1 pound ground beef
  • 1 teaspoon ground cumin (optional)
  • 1 teaspoon chili powder (optional)
  • 2 cups beef broth
  • Kosher salt, to taste


Instructions

  1. Cook the bacon until crispy and set aside, reserving about ¼ cup for garnish.
  2. Preheat a Dutch oven over medium-high heat. Add tallow or bacon grease to the pot.
  3. Sear the sirloin chunks until browned, about 2-3 minutes per side. Remove and set aside.
  4. Add ground beef (and optional spices) to the pot. Cook for about 15 minutes, breaking apart until browned and fully cooked.
  5. Return sirloin chunks to the pot and pour in the beef broth.
  6. Bring to a boil, then reduce to a simmer. Cook uncovered for about 30 minutes.
  7. Crumble bacon into small pieces and add to the chili. Adjust salt to taste.

Notes

For thicker chili, simmer longer. Adjust spices to your preference, and consider adding cayenne or crushed red pepper for heat.
