Ingredients
- 4 boneless chicken thighs (600g)
- 2 tablespoons soy sauce (30ml)
- 1 tablespoon dark soy sauce (15ml)
- 1 tablespoon brown sugar (12g)
- 1 tablespoon honey (20g)
- 4 cloves garlic, minced
- 1 tablespoon (15 ml) fresh ginger, grated
- 1 tablespoon rice vinegar (15ml)
- 2 tablespoons vegetable oil (30ml)
- 2 cups chicken broth (480ml)
- 1 teaspoon sesame oil (5ml)
- 2 cups cooked white rice (380g)
- Chopped green onions, for garnish
- Sesame seeds, for garnish
Instructions
- In a mixing bowl, combine the soy sauces, brown sugar, honey, and rice vinegar to form the marinade.
- Let the chicken thighs soak in the marinade for a minimum of 20 minutes.
- Warm up vegetable oil in a skillet over medium to high heat. Cook the chicken thighs on each side until they achieve a caramelised finish and are fully cooked. Set them aside.
- Using the same skillet, introduce the minced garlic and grated ginger. Cook for 1-2 minutes until they release a pleasant aroma.
- Add the chicken broth and sesame oil, bringing the mixture to a gentle boil and allowing it to reduce slightly.
- Slice the previously cooked chicken and place it back into the broth to heat it for 2-3 minutes.
- Present the chicken and broth atop servings of cooked white rice.
- Decorate with chopped green onions and sprinkle sesame seeds on top.
