Ingredients

  • 4 boneless chicken thighs (600g)
  • 2 tablespoons soy sauce (30ml)
  • 1 tablespoon dark soy sauce (15ml)
  • 1 tablespoon brown sugar (12g)
  • 1 tablespoon honey (20g)
  • 4 cloves garlic, minced
  • 1 tablespoon (15 ml) fresh ginger, grated
  • 1 tablespoon rice vinegar (15ml)
  • 2 tablespoons vegetable oil (30ml)
  • 2 cups chicken broth (480ml)
  • 1 teaspoon sesame oil (5ml)
  • 2 cups cooked white rice (380g)
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish


Instructions

  1. In a mixing bowl, combine the soy sauces, brown sugar, honey, and rice vinegar to form the marinade.
  2. Let the chicken thighs soak in the marinade for a minimum of 20 minutes.
  3. Warm up vegetable oil in a skillet over medium to high heat. Cook the chicken thighs on each side until they achieve a caramelised finish and are fully cooked. Set them aside.
  4. Using the same skillet, introduce the minced garlic and grated ginger. Cook for 1-2 minutes until they release a pleasant aroma.
  5. Add the chicken broth and sesame oil, bringing the mixture to a gentle boil and allowing it to reduce slightly.
  6. Slice the previously cooked chicken and place it back into the broth to heat it for 2-3 minutes.
  7. Present the chicken and broth atop servings of cooked white rice.
  8. Decorate with chopped green onions and sprinkle sesame seeds on top.

  • Marinate chicken thighs in soy sauce mixture overnight for enhanced flavor.
