  • 710 ml cooked chopped beef

  • 2 (425 g) cans kidney beans, rinsed and drained
  • 310 g canned white corn, drained
  • 2 (115 g) cans chopped green chilies, undrained
  • 2 Tbsp (10 g) dried minced onion flakes
  • 1/4 tsp (1.25 ml) garlic powder
  • 10 g cumin
  • 5 g chili powder
  • 22 g cajun seasoning
  • 475 g shredded cheddar cheese


Instructions

  1. In a Dutch oven, heat the vegetable oil and incorporate the flour. Stir constantly for 2 minutes. Gradually pour in the chicken broth and coconut cream while whisking. Allow it to reach a boil and let it cook for 2 minutes until the mixture thickens.
  2. Introduce the rest of the ingredients and let them cook together for an additional 10 to 15 minutes, stirring from time to time.
