Ingredients
- 2 Tbsp (30 ml) vegetable oil
- 2 Tbsp (15 g) all-purpose flour
- 710 ml chicken broth
- 240 ml coconut cream
- 710 ml cooked chopped beef
- 450 g beef or chicken sausage, sliced and browned
- 2 (425 g) cans kidney beans, rinsed and drained
- 310 g canned white corn, drained
- 2 (115 g) cans chopped green chilies, undrained
- 2 Tbsp (10 g) dried minced onion flakes
- 1/4 tsp (1.25 ml) garlic powder
- 10 g cumin
- 5 g chili powder
- 22 g cajun seasoning
- 475 g shredded cheddar cheese
Instructions
- In a Dutch oven, heat the vegetable oil and incorporate the flour. Stir constantly for 2 minutes. Gradually pour in the chicken broth and coconut cream while whisking. Allow it to reach a boil and let it cook for 2 minutes until the mixture thickens.
- Introduce the rest of the ingredients and let them cook together for an additional 10 to 15 minutes, stirring from time to time.
