Ingredients
- 1.5 bell peppers, sliced
- 1.5 cups spicy chicken sausages, diced
- 1 large potato, peeled & diced
- 1 red onion, sliced
- Cajun seasoning, to taste
- 2 tablespoons mayo
- 1 teaspoon water
- 1/2 teaspoon hot sauce
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/4 teaspoon paprika
- 1/4 teaspoon Old Bay seasoning
- Salt, to taste
Instructions
- Preheat your oven to 375 degrees.
- Prep your veggies by chopping your red onion and bell peppers into long skinny pieces. Peel and dice your potato, and slice the sausage into thin pieces.
- Add your chopped bell peppers, red onion, diced potatoes, and sliced sausage to a baking sheet. Generously season everything with Cajun seasoning.
- Drizzle a bit of olive oil over your baking sheet, ensuring everything is coated evenly.
- Bake in the oven for 30 minutes.
- Prepare your creamy Cajun-inspired sauce by combining mayo, water, hot sauce, a drizzle of olive oil, Cajun seasoning, and a pinch of salt in a bowl. Stir until smooth.
