Description

Ingredients

  • 1.5 bell peppers, sliced
  • 1.5 cups spicy chicken sausages, diced
  • 1 large potato, peeled & diced
  • 1 red onion, sliced
  • Cajun seasoning, to taste
  • 2 tablespoons mayo
  • 1 teaspoon water
  • 1/2 teaspoon hot sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon Old Bay seasoning
  • Salt, to taste


Instructions

  1. Preheat your oven to 375 degrees.
  2. Prep your veggies by chopping your red onion and bell peppers into long skinny pieces. Peel and dice your potato, and slice the sausage into thin pieces.
  3. Add your chopped bell peppers, red onion, diced potatoes, and sliced sausage to a baking sheet. Generously season everything with Cajun seasoning.
  4. Drizzle a bit of olive oil over your baking sheet, ensuring everything is coated evenly.
  5. Bake in the oven for 30 minutes.
  6. Prepare your creamy Cajun-inspired sauce by combining mayo, water, hot sauce, a drizzle of olive oil, Cajun seasoning, and a pinch of salt in a bowl. Stir until smooth.
  7. Serve the sheet pan dinner in bowls and top with your creamy Cajun sauce. Enjoy!
