Ingredients
4 pieces chicken breasts boneless, skinless
To taste salt and pepper for seasoning
1 tablespoon (15 ml) olive oil
1 cup (240 ml) Caesar dressing store-bought or homemade
1/2 cup (120 ml) Parmesan cheese grated
1 pound (454 g) asparagus spears trimmed
1 teaspoon (5 ml) garlic powder
1 lemon cut into wedges for garnish
Instructions
1. Set your oven to 375°F (190°C) to warm up. Sprinkle salt and pepper on both sides of the chicken breasts.
2. In a large skillet that can go into the oven, warm olive oil on medium-high heat. Brown the chicken breasts for 3-4 minutes per side until they turn golden. Take the skillet off the heat.
3. Drizzle Caesar dressing over each chicken piece, then evenly distribute grated Parmesan cheese on top.
4. Place the asparagus spears around the chicken in the skillet. Dust the asparagus with garlic powder and add a bit more Parmesan if you wish.
5. Put the skillet in the oven and cook for 20 minutes, until the chicken reaches an internal heat of 165°F (74°C) and the asparagus is crisp yet tender.
6. Take the skillet out of the oven and allow it to rest for a short time. Squeeze fresh lemon wedges over the chicken and asparagus before serving hot.
Notes
1. For a bolder flavor, marinate the chicken in Caesar dressing for 30 minutes before cooking.
2. If you prefer a more tangy taste, add a bit of lemon juice to the Caesar dressing before drizzling over the chicken.
3. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently to prevent the chicken from drying out.
4. Ensure that the asparagus spears are of similar thickness to cook evenly alongside the chicken.
