Ingredients

  • 4 pieces chicken breasts boneless, skinless
  • To taste salt and pepper for seasoning
  • 1 tablespoon (15 ml) olive oil
  • 1 cup (240 ml) Caesar dressing store-bought or homemade
  • 1/2 cup (120 ml) Parmesan cheese grated
  • 1 pound (454 g) asparagus spears trimmed
  • 1 teaspoon (5 ml) garlic powder
  • 1 lemon cut into wedges for garnish


Instructions

  1. Set your oven to 375°F (190°C) to preheat. Sprinkle salt and pepper on both sides of the chicken breasts for seasoning.
  2. Warm olive oil in a sizable oven-safe skillet over medium-high heat. Cook the chicken breasts for 3-4 minutes on each side until they achieve a golden color. Remove the skillet from the heat source.
  3. Drizzle Caesar dressing over each chicken piece and evenly distribute Parmesan cheese on top.
  4. Arrange asparagus around the chicken within the skillet. Dust the asparagus with garlic powder and a bit more Parmesan, if you like.
  5. Place the skillet in the oven and cook for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the asparagus becomes tender but still crisp.
  6. Take the skillet out of the oven and allow it to sit for a short while. Squeeze lemon wedges over the chicken and asparagus, then serve while hot.
