Ingredients
- 4 pieces chicken breasts boneless, skinless
- To taste salt and pepper for seasoning
- 1 tablespoon (15 ml) olive oil
- 1 cup (240 ml) Caesar dressing store-bought or homemade
- 1/2 cup (120 ml) Parmesan cheese grated
- 1 pound (454 g) asparagus spears trimmed
- 1 teaspoon (5 ml) garlic powder
- 1 lemon cut into wedges for garnish
Instructions
- Set your oven to 375°F (190°C) to preheat. Sprinkle salt and pepper on both sides of the chicken breasts for seasoning.
- Warm olive oil in a sizable oven-safe skillet over medium-high heat. Cook the chicken breasts for 3-4 minutes on each side until they achieve a golden color. Remove the skillet from the heat source.
- Drizzle Caesar dressing over each chicken piece and evenly distribute Parmesan cheese on top.
- Arrange asparagus around the chicken within the skillet. Dust the asparagus with garlic powder and a bit more Parmesan, if you like.
- Place the skillet in the oven and cook for 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the asparagus becomes tender but still crisp.
- Take the skillet out of the oven and allow it to sit for a short while. Squeeze lemon wedges over the chicken and asparagus, then serve while hot.
Notes
- Use a light Caesar dressing and less Parmesan cheese for a healthier dish.
- Add cherry tomatoes or bell peppers to the skillet for extra color and flavor.
- Trim asparagus spears properly to remove tough ends before cooking.
