Description

A heartwarming cabbage soup that combines vibrant vegetables, savory broth, and a touch of nostalgia.

Ingredients

  • 1 medium head of cabbage, chopped
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 1 can of diced tomatoes
  • Salt and pepper to taste
  • Optional: shredded chicken, ground beef, or sausage

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the onions and garlic until fragrant.
  2. Add the carrots and cook for a few more minutes.
  3. Stir in the cabbage and cook until it starts to wilt.
  4. Pour in the broth and diced tomatoes, and season with salt and pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 30 minutes.
  6. Add in any optional ingredients like chicken or sausage and cook until heated through.
  7. Serve hot.

Notes

Taste occasionally to adjust seasoning as needed. Cabbage soup often tastes better the next day as flavors deepen.
