A warm and cozy bake combining sweet apples and earthy butternut squash, enhanced with cinnamon and topped with crunchy nuts.
Ingredients
- 1 medium butternut squash, peeled and diced
- 3 medium apples, cored and diced
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the diced butternut squash and apples.
- In a separate bowl, mix the brown sugar, cinnamon, nutmeg, melted butter, and vanilla extract.
- Pour the sugar mixture over the squash and apples, gently folding to combine.
- Transfer the mixture to a baking dish and spread it evenly.
- Sprinkle the chopped nuts on top.
- Bake for 25-30 minutes, or until the squash is tender and the top is golden brown.
- Optionally, broil for a few minutes for a caramelized finish.
Notes
For added depth of flavor, consider toasting the nuts beforehand or adding a hint of ginger or allspice.
