Ingredients
- 2 (1 1/4-pound) bone-in rib eye steaks
- Kosher salt
- Freshly ground black pepper
- 2 tablespoons canola oil
- 4 tablespoons unsalted butter
- 4 thyme sprigs
- 3 garlic cloves, smashed
- 1 rosemary sprig
Instructions
- Preheat the cast-iron skillet over medium-high heat.
- Season the rib eye steaks generously with kosher salt and freshly ground black pepper.
- Add canola oil to the skillet and sear the steaks for 4-5 minutes on each side until browned.
- In the last minute of cooking, add the unsalted butter, thyme, garlic, and rosemary to the skillet.
- Use a spoon to baste the steaks with the melted butter and herb mixture.
- Remove the steaks from the skillet and let them rest for 5 minutes before serving.
Notes
Allow steaks to rest for juiciness. Consider using a meat thermometer for perfect doneness, aiming for 130°F for medium-rare.
