Ingredients

  • 1 tablespoon (15 ml) vegetable oil
  • 1 tablespoon (15 g) margarine
  • 1/2 medium onion, chopped
  • 2 stalks celery, chopped small
  • 2 medium carrots, peeled & chopped small
  • 1 tablespoon (8 g) cornstarch
  • 1 (28 g) packet ranch seasoning (I used Hidden Valley)
  • 4 cups (960 ml) chicken broth
  • 1/4 cup (60 ml) hot sauce
  • 5 pounds (680 g) uncooked chicken breasts, see note
  • 8 ounces (225 g) dairy-free cream cheese, see note
  • Salt & pepper to taste
  • Garnish (optional): crumbled dairy-free cheese, chopped scallions


Instructions

  1. Pour the vegetable oil and margarine into a saucepan over medium-high heat. Cook the onion, celery, and carrots for around 7 minutes until softened.
  2. Incorporate the cornstarch and ranch seasoning, then pour in the chicken broth and hot sauce.
  3. Place the whole chicken breasts into the saucepan. Turn the heat to high until the mixture starts to boil. Once boiling, lower the heat to maintain a simmer. Keep the lid partially open and let it cook for 12 minutes. If the chicken isn’t fully covered by the liquid, consider turning it halfway through cooking.
  4. Remove the chicken from the saucepan and set it on a cutting board. Meanwhile, blend the dairy-free cream cheese into the soup. Cut the chicken into pieces. It should be mostly cooked, but if not completely done, don’t worry. You may need to assist the cream cheese with mixing using your spoon. Return the chicken pieces to the soup once the cream cheese is fully mixed in.
  5. If the chicken needs more cooking, let it simmer a few additional minutes. Adjust the seasoning with salt and pepper as needed. Serve the soup and add garnishes if desired. If you enjoy blue cheese, you can mix some into the soup before serving.

Notes

  • Cut the chicken breasts into smaller pieces before adding to the soup for even cooking.
  • Ensure the dairy-free cream cheese is thoroughly blended into the soup for a creamy consistency.
  • If the chicken is not fully cooked after simmering, continue cooking until done.
