A vibrant and flavorful appetizer featuring ripe tomatoes, fresh basil, and rich cheeses.
Ingredients
- 4 Roma tomatoes, diced
- ¼ cup fresh basil leaves, chopped
- 2 garlic cloves, minced
- 1 tablespoon extra virgin olive oil
- 1–2 teaspoons balsamic vinegar (to taste)
- Salt, to taste
- 8 oz feta cheese block, crumbled
- ½ block cream cheese (4 oz), softened
- ½ cup sour cream
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon olive oil (for cheese mixture)
- More basil leaves, chopped (for garnish)
- Red pepper flakes (to taste)
- Freshly grated Parmesan cheese (for topping)
Instructions
- Dice the Roma tomatoes and place them in a large mixing bowl.
- Add chopped basil, minced garlic, olive oil, balsamic vinegar, and salt to the tomatoes.
- Allow the mixture to sit for at least 15 minutes.
- In a separate bowl, combine feta cheese, softened cream cheese, sour cream, the second minced garlic, lemon juice, and olive oil.
- Blend the cheese mixture until smooth.
- Adjust seasoning with salt if necessary.
- Layer the bruschetta mixture on top of the cheese mixture in a serving dish.
- Garnish with chopped basil, red pepper flakes, and Parmesan cheese.
Notes
Use firm, in-season tomatoes for the best flavor. Adjust the balsamic vinegar and salt to taste.
