Description

A vibrant and flavorful appetizer featuring ripe tomatoes, fresh basil, and rich cheeses.


Ingredients

  • 4 Roma tomatoes, diced
  • ¼ cup fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon extra virgin olive oil
  • 12 teaspoons balsamic vinegar (to taste)
  • Salt, to taste
  • 8 oz feta cheese block, crumbled
  • ½ block cream cheese (4 oz), softened
  • ½ cup sour cream
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon olive oil (for cheese mixture)
  • More basil leaves, chopped (for garnish)
  • Red pepper flakes (to taste)
  • Freshly grated Parmesan cheese (for topping)


Instructions

  1. Dice the Roma tomatoes and place them in a large mixing bowl.
  2. Add chopped basil, minced garlic, olive oil, balsamic vinegar, and salt to the tomatoes.
  3. Allow the mixture to sit for at least 15 minutes.
  4. In a separate bowl, combine feta cheese, softened cream cheese, sour cream, the second minced garlic, lemon juice, and olive oil.
  5. Blend the cheese mixture until smooth.
  6. Adjust seasoning with salt if necessary.
  7. Layer the bruschetta mixture on top of the cheese mixture in a serving dish.
  8. Garnish with chopped basil, red pepper flakes, and Parmesan cheese.

Notes

Use firm, in-season tomatoes for the best flavor. Adjust the balsamic vinegar and salt to taste.
