Ingredients
- 1 pound cooked chicken, shredded
- 4 slices bacon, chopped
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) lima beans, drained
- 1 onion, chopped
- 1 cup chicken broth
- Salt and pepper to taste
- Optional: garlic, bell peppers, or other vegetables
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy.
- Add the chopped onion (and any other vegetables if using) to the pot and sauté until tender.
- Stir in the shredded chicken, corn, diced tomatoes, lima beans, and chicken broth.
- Allow the stew to simmer for about 20 minutes, stirring occasionally.
