Ingredients

  • 1 lb beef sirloin, thinly sliced (450 g)
  • 2 cups broccoli florets (200 g)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups cooked rice (360 g)
  • 1 cup beef broth (240 ml)
  • 1 cup shredded cheddar cheese (115 g)
  • 1 tablespoon soy sauce (15 ml)
  • 1 tablespoon cornstarch (8 g)
  • 2 tablespoons water (30 ml)
  • 2 tablespoons olive oil (30 ml)
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Add the sliced beef sirloin to the skillet and season with salt and black pepper.
  4. Cook the beef until browned, about 5-7 minutes, then remove from the skillet.
  5. In the same skillet, add the remaining tablespoon of olive oil.
  6. Add the chopped onion and minced garlic, sauté for 2-3 minutes until softened.
  7. Add the broccoli florets to the skillet and cook for an additional 4-5 minutes.
  8. Return the beef to the skillet and stir in the cooked rice.
  9. In a small bowl, mix the beef broth, soy sauce, cornstarch, and water until smooth.
  10. Pour the broth mixture over the beef and vegetable mixture in the skillet.
  11. Stir the mixture until the sauce thickens slightly, about 2-3 minutes.
  12. Transfer the beef and vegetable mixture to a baking dish.
  13. Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  14. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
  15. Remove from the oven and let cool slightly before serving.

  • For a healthier option, use low-sodium beef broth to decrease the salt content.
