Ingredients
- 1 lb beef sirloin, thinly sliced (450 g)
- 2 cups broccoli florets (200 g)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups cooked rice (360 g)
- 1 cup beef broth (240 ml)
- 1 cup shredded cheddar cheese (115 g)
- 1 tablespoon soy sauce (15 ml)
- 1 tablespoon cornstarch (8 g)
- 2 tablespoons water (30 ml)
- 2 tablespoons olive oil (30 ml)
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the sliced beef sirloin to the skillet and season with salt and black pepper.
- Cook the beef until browned, about 5-7 minutes, then remove from the skillet.
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the chopped onion and minced garlic, sauté for 2-3 minutes until softened.
- Add the broccoli florets to the skillet and cook for an additional 4-5 minutes.
- Return the beef to the skillet and stir in the cooked rice.
- In a small bowl, mix the beef broth, soy sauce, cornstarch, and water until smooth.
- Pour the broth mixture over the beef and vegetable mixture in the skillet.
- Stir the mixture until the sauce thickens slightly, about 2-3 minutes.
- Transfer the beef and vegetable mixture to a baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
- Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before serving.
