Ingredients

  • 2 eggs
  • Some cooking oil, I used rice bran oil
  • 1 cup (240 ml) cooked rice
  • 1/2 Tbsp (8 ml) soy sauce, regular (add slightly more if adding other vegetables or proteins)
  • 1/2 Tbsp (8 ml) toasted sesame oil (optional )
  • 1/2 Tbsp (8 ml) toasted sesame seeds (optional )
  • 1-2 Tbsp (23 ml) green onions, thinly sliced (optional )
  • Fine sea salt, to taste (optional )


Instructions

  1. Whisk the eggs in a bowl.
  2. Warm a pan on medium-high heat. Once hot, drizzle in some cooking oil. Lower the heat to medium. Pour the whisked eggs into the pan. As the eggs begin to set, use a fork or chopsticks to break them into smaller bits.
  3. Introduce the rice when the eggs are about 70-80% set and mix it well with the eggs. Add the soy sauce and gently combine it with the rest of the ingredients.
  4. (Optional) Drizzle some sesame oil, sprinkle sesame seeds, and add sliced green onions, then lightly toss everything together.
