Ingredients
- – 6 eggs (6)
- – 1 cup shredded beef cheese divided (240g)
- – 1/2 teaspoon (3 ml) salt
- – 1/2 teaspoon (3 ml) black pepper
- – 1/4 cup red onion chopped (40g)
- – 1 cup mushrooms chopped (150g)
- – 8-10 stalks asparagus ends trimmed and chopped (200g)
- – 1/4 cup parsley chopped (15g)
- – 1/2 cup cherry tomatoes sliced (75g)
Instructions
- Set your oven to a temperature of 425°F.
- In a bowl, combine the eggs with half of the beef cheese, along with the salt and pepper, then put this aside.
- Warm some olive oil in a pan that can go in the oven, like a cast-iron skillet, and toss in the red onion, mushrooms, and asparagus. Sauté these for 3 to 5 minutes until they become tender.
- Pour the egg mixture over the softened vegetables. Scatter the parsley and cherry tomatoes on top, followed by the rest of the cheese.
- Place the pan in the oven, leaving it uncovered, and bake until the center is firm and no longer wobbly, which should take about 10 to 15 minutes.
Notes
- For a smoother consistency, consider adding a dash of milk or cream to the egg mixture before baking. Customize this dish with your preferred vegetables like bell peppers or spinach. To add some spice, sprinkle red pepper flakes or hot sauce on top before serving.
