Ingredients
- 25 cup (60 ml) extra-virgin olive oil
- 3 cloves garlic, minced
- 5 cup (360 ml) s Italian dry bread crumbs
- 25 cup (60 ml) chopped fresh flat-leaf parsley
- 5 cup (120 ml) grated Parmesan cheese
- 1 pound (454 g) beef tenderloin, cut into 1 inch cubes
- Salt and pepper to taste
- 5 cup (1200 ml) s arugula
- 1 lemon, cut into quarters
Instructions
- Set the oven to broil and position the oven rack approximately 6 inches away from the heat source. Cover a baking tray with aluminum foil.
- Gently heat the olive oil and minced garlic together in a small saucepan on low for 5 minutes to allow the garlic to infuse its flavor into the oil. Transfer the bread crumbs to a mixing bowl, and drizzle the garlic-infused oil over them. Mix in the parsley and grated Parmesan cheese until the ingredients are well combined. Coat the beef cubes thoroughly with the bread crumb mixture and arrange them on the lined baking tray, ensuring they do not touch one another.
- Broil the beef in the oven until the bread crumb coating is golden brown and the beef turns from red to pink in the center, or reaches your preferred level of doneness, approximately 6 minutes. Rotate the cubes occasionally during cooking.
- Arrange the arugula evenly on 4 serving plates, and place the broiled beef on top. Squeeze a lemon wedge over each plate before serving.
