A vibrant and crunchy coleslaw balancing creaminess and tanginess, perfect for summer gatherings.
Ingredients
- 1 small green cabbage, shredded
- 1 small red cabbage, shredded
- 2 large carrots, grated
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
- Optional: sliced jalapeños for heat
Instructions
- In a large bowl, combine both types of cabbage and grated carrots.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper.
- Pour the dressing over the cabbage and carrots. Toss to coat evenly.
- If desired, add sliced jalapeños for an added kick.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
