Description
Delicious and refreshing blueberry swirl yogurt bites made with creamy Greek yogurt and vibrant blueberry compote.
Ingredients
- 1 cup Greek yogurt
- 1/2 cup blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional)
Instructions
- In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for 5 minutes until the blueberries soften.
- If using, dissolve cornstarch in a small amount of water and stir it into the blueberry mixture to thicken.
- Remove the mixture from heat and allow it to cool completely.
- In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust sweetness with more honey or maple syrup, if desired.
- Spoon the yogurt into silicone molds or mini muffin tins, filling them about three-quarters full.
- Add a spoonful of the cooled blueberry compote on top of each yogurt portion. Use a toothpick to swirl gently, creating a marbled effect.
- Freeze the molds for at least 180 minutes until solid.
- Remove the frozen bites from molds and store them in an airtight container in the freezer. Let them sit for 2–3 minutes before eating for the best texture.
Notes
You can use different fruits to create various flavors. Garnish with fresh blueberries or mint leaves for a lovely presentation.
