Ingredients
- 2 cups cottage cheese
- 1 cup fresh blueberries
- 3 large eggs
- ½ cup rolled oats
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), and vanilla extract until well combined.
- Stir in the rolled oats, cinnamon, and salt until evenly mixed.
- Gently fold in the fresh blueberries.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 35 minutes, or until the center is set and the top is lightly golden.
- Allow to cool slightly before serving.
Notes
For best results, use fresh blueberries. Consider adding nuts or seeds for extra crunch.
