Description

A refreshing slice of Blackberry Lemonade Pie, combining tart lemon and sweet blackberries for a perfect summer dessert.


Ingredients

  • 30 Golden Oreo cookies
  • 1/3 cup butter, melted
  • 2 (8 oz.) packages of cream cheese, softened
  • 1 (14 oz.) can of sweetened condensed milk
  • 1 teaspoon lemon zest
  • 3/4 cup lemon juice
  • 1 cup whipping cream
  • 2 tablespoons sugar
  • 1/4 cup seedless blackberry jam, melted and cooled


Instructions

  1. Pulse the Golden Oreo cookies in a food processor to form crumbs.
  2. Add the melted butter and pulse to combine.
  3. Press the mixture into the bottom and up the sides of a 9-inch deep dish pie pan.
  4. Freeze the crust while preparing the filling.
  5. Beat the softened cream cheese in a large bowl with an electric mixer until smooth.
  6. Add the sweetened condensed milk and beat for one minute.
  7. Incorporate the lemon juice and lemon zest, beating until smooth.
  8. Beat the whipping cream and sugar in a separate bowl until stiff peaks form.
  9. Fold the whipped cream into the cream cheese mixture until fully incorporated.
  10. Spread the filling into the prepared crust.
  11. Spoon the melted blackberry jam over the top, swirling it gently with a sharp knife.
  12. Cover the pie and refrigerate until firm, about 240-360 minutes.

Notes

Chill mixing bowls for better whipping volume; taste the filling before adding more lemon juice to adjust tartness.
