A refreshing slice of Blackberry Lemonade Pie, combining tart lemon and sweet blackberries for a perfect summer dessert.
Ingredients
- 30 Golden Oreo cookies
- 1/3 cup butter, melted
- 2 (8 oz.) packages of cream cheese, softened
- 1 (14 oz.) can of sweetened condensed milk
- 1 teaspoon lemon zest
- 3/4 cup lemon juice
- 1 cup whipping cream
- 2 tablespoons sugar
- 1/4 cup seedless blackberry jam, melted and cooled
Instructions
- Pulse the Golden Oreo cookies in a food processor to form crumbs.
- Add the melted butter and pulse to combine.
- Press the mixture into the bottom and up the sides of a 9-inch deep dish pie pan.
- Freeze the crust while preparing the filling.
- Beat the softened cream cheese in a large bowl with an electric mixer until smooth.
- Add the sweetened condensed milk and beat for one minute.
- Incorporate the lemon juice and lemon zest, beating until smooth.
- Beat the whipping cream and sugar in a separate bowl until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture until fully incorporated.
- Spread the filling into the prepared crust.
- Spoon the melted blackberry jam over the top, swirling it gently with a sharp knife.
- Cover the pie and refrigerate until firm, about 240-360 minutes.
Notes
Chill mixing bowls for better whipping volume; taste the filling before adding more lemon juice to adjust tartness.
