Description

Ingredients

  • 1 cup fresh blackberries
  • 1/2 cup lemon juice
  • 1 lemon, zested
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 tablespoon fresh thyme leaves
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, powdered sugar, and salt. Add the softened butter and blend until crumbly.
  3. Press the mixture into the bottom of a greased 8-inch square pan.
  4. Bake for 15 minutes until lightly golden.
  5. In another bowl, combine the egg, lemon juice, lemon zest, thyme, and blackberries.
  6. Pour the blackberry mixture over the baked crust.
  7. Bake for an additional 20-25 minutes until set.
