Ingredients
- 1 cup fresh blackberries
- 1/2 cup lemon juice
- 1 lemon, zested
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 tablespoon fresh thyme leaves
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the flour, powdered sugar, and salt. Add the softened butter and blend until crumbly.
- Press the mixture into the bottom of a greased 8-inch square pan.
- Bake for 15 minutes until lightly golden.
- In another bowl, combine the egg, lemon juice, lemon zest, thyme, and blackberries.
- Pour the blackberry mixture over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Let cool, then slice into squares and serve.
