Description
A rich and hearty dish of black beans and rice paired with sausage, reminiscent of family traditions and communal cooking.
Ingredients
- 1 cup black beans, rinsed and drained
- 1 cup rice
- 1 pound sausage (smoked or andouille)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, bell pepper, and garlic; sauté until softened.
- Add the sausage and cook until browned.
- Stir in black beans, rice, chicken broth, cumin, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and cover.
- Simmer for about 20-25 minutes, or until rice is cooked and liquid is absorbed.
- Fluff with a fork and serve hot.
Notes
For a spicier dish, add crushed red pepper flakes or diced jalapeños during cooking. Serve with lime wedges for added flavor.
