A comforting and nourishing soup that combines the earthiness of black beans with the sweetness of tender sweet potatoes.
Ingredients
- 1 can black beans, drained and rinsed
- 1 large sweet potato, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for sautéing
- Cilantro for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened.
- Stir in the diced sweet potato, cumin, chili powder, salt, and pepper. Cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to let it simmer until the sweet potatoes are tender, approximately 15-20 minutes.
- Add the black beans, continuing to cook for another 5 minutes.
- Use an immersion blender to blend the soup to your desired consistency.
- Serve hot, garnished with cilantro if desired.
