Description

A comforting and nourishing soup that combines the earthiness of black beans with the sweetness of tender sweet potatoes.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 large sweet potato, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Cilantro for garnish (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened.
  3. Stir in the diced sweet potato, cumin, chili powder, salt, and pepper. Cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to let it simmer until the sweet potatoes are tender, approximately 15-20 minutes.
  5. Add the black beans, continuing to cook for another 5 minutes.
  6. Use an immersion blender to blend the soup to your desired consistency.
  7. Serve hot, garnished with cilantro if desired.
