Description

Delight in these nutritious and vibrant birthday cake confetti protein balls that satisfy sweet cravings while being a healthy snack.

Ingredients

  • 1 cup protein powder
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1/2 cup sugar-free sprinkles
  • 1/4 cup unsweetened shredded coconut (optional)
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons almond milk (if needed for consistency)

Instructions

  1. In a large mixing bowl, combine the protein powder, almond flour, honey or maple syrup, almond butter, sugar-free sprinkles, shredded coconut (if using), and vanilla extract.
  2. Mix until well combined. If the mixture is too dry, add almond milk one tablespoon at a time until the desired consistency is reached.
  3. Roll the mixture into small balls using your hands, about 1 inch in diameter.
  4. Place the protein balls on a baking sheet or plate lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Enjoy as a healthy snack or dessert!

Notes

For variety, try different nut butters or add mix-ins like chopped nuts or dark chocolate chips. Store in an airtight container for up to a week in the refrigerator.
