Ingredients

  • 500 g de boeuf paleron, palette, collier ou épaule
  • 550 g de tomates pelées au jus
  • 2 bons oignons
  • 4 gousses d’ ail
  • 2 cubes bouillon de volaille
  • 900 ml d’ eau bouillante
  • 2 cuillères à soupe (30 ml) de cumin
  • 1 cuillère à café de cannelle
  • 2 cuillères à soupe (30 ml) d’ origan
  • 1 cuillère à soupe (15 ml) de gingembre
  • 2 cuillères à soupe (30 ml) de paprika
  • 2 cuillères à soupe (30 ml) de thym
  • 3 piments Guajillo
  • 2 piments Ancho
  • 3 piments de Arbol
  • 4 petit es tortillas
  • 60 g de fromage style cheddar
  • Quelques feuilles de coriandre
  • 1 citron vert
  • 1/2 oignon rouge
  • Un peu de sel fin
  • Un peu de poivre
  • Un peu d’huile végétale pour la cuisson


Instructions

  1. Season the beef with salt and pepper, then cut it into large chunks and brown them for a few minutes.
  2. Remove the stems and seeds from the peppers. In the pot, add the chicken broth, peppers, peeled garlic cloves, and quartered onions.
  3. Also, add the peeled tomatoes, ginger, cinnamon, oregano, thyme, cumin, and paprika. Cover and let simmer for 1 hour over medium heat, ensuring it bubbles gently.
  4. Afterward, take out the peeled tomatoes, garlic cloves, onion quarters, peppers, and some broth, then blend them until smooth. Strain the mixture and return the liquid to the pot. Cover again and cook for another 2 to 2.5 hours on a lower heat, maintaining a gentle simmer.
  5. Once the time is up, remove the meat and shred it using two forks. Grate the cheddar and set it aside. Heat a large dollop of butter in a hot pan, dip a tortilla into the sauce, and place it in the pan. Add some shredded beef and grated cheddar, then fold the tortilla in half.
  6. Cook for a few minutes on the first side, then flip and cook for a few more minutes. Place in a dish and repeat until all ingredients are used.
  7. Serve everything on a large plate garnished with plenty of cilantro, a few lime zest shavings, some lime juice, and finely sliced red onion.
