Ingredients
- 1 cup orzo pasta (200g)
- 2 tablespoons olive oil (30ml)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 medium zucchini, chopped
- 1 cup cherry tomatoes, halved (150g)
- 1 cup vegetable broth (240ml)
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried basil
- Salt, to taste
- Black pepper, to taste
- 1/2 cup crumbled feta cheese (75g)
- 1/4 cup fresh parsley, chopped (15g)
Instructions
- Cook the orzo pasta in a large pot of boiling salted water until al dente, about 8-10 minutes. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion to the skillet and sauté until it becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another 1 minute until fragrant.
- Add the chopped bell pepper and zucchini to the skillet. Cook, stirring occasionally, for 5-6 minutes until the vegetables are tender.
- Stir in the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Add the cooked orzo to the skillet and stir well to combine.
- Season with dried oregano, dried basil, salt, and black pepper.
- Cook for another 2-3 minutes to allow the flavors to meld.
- Remove the skillet from heat and stir in the crumbled feta cheese.
- Garnish with chopped fresh parsley before serving.
