Ingredients

  • 1 cup orzo pasta (200g)

  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup crumbled feta cheese (75g)
  • 1/4 cup fresh parsley, chopped (15g)


Instructions

  1. Cook the orzo pasta in a large pot of boiling salted water until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chopped onion to the skillet and sauté until it becomes translucent, about 3-4 minutes.
  4. Stir in the minced garlic and cook for another 1 minute until fragrant.
  5. Add the chopped bell pepper and zucchini to the skillet. Cook, stirring occasionally, for 5-6 minutes until the vegetables are tender.
  6. Stir in the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
  7. Pour in the vegetable broth and bring the mixture to a simmer.
  8. Add the cooked orzo to the skillet and stir well to combine.
  9. Season with dried oregano, dried basil, salt, and black pepper.
  10. Cook for another 2-3 minutes to allow the flavors to meld.
  11. Remove the skillet from heat and stir in the crumbled feta cheese.
  12. Garnish with chopped fresh parsley before serving.
